Mommy Movie Reviews – Finding Dory

Finding Dory

New to theaters this weekend is Disney Pixar’s “Finding Dory”, a family adventure/comedy (rated PG).

It was a cute film, good but not great. It’s hard for sequels to capture the magic of the original. That won’t stop studios though from trying in pursuit of the all mighty box office dollar, not to mention merchandising opportunities.

The plot was a little too close to “Finding Nemo”. It would have been far more interesting if they went in a completely different direction. It also was heavy on adventure, light on laughs.

With Marlin (voice of Albert Brooks) & Nemo (voice of Hayden Rolence) along for the ride, Dory (voice of Ellen DeGeneres) travels the ocean to make her way home to California in search of her parents. Dory, a blue tang fish who suffers from short-term memory loss, got separated from her parents as a small fish and due to her condition couldn’t remember how to find her way home. Through a series of events, Dory has flash backs of her parents and her home providing enough info for Nemo and Marlin to help her find her way back. But of course, nothing goes smoothly or as planned. Along the way Dory makes many new friends who aid her in her journey, the most interesting being Hank a curmudgeon octopus (voiced by Ed O’Neill).

What made me the happiest is that unlike “The Good Dinosaur”, this was not another Disney Pixar tear jerker. Kids movies should be happy in my opinion, not boo-hoo fests!

Happy Release Day!!!

Today I received an e-mail from my Editor at Cedar Fort Publishing with “Happy Release Day” in the subject line.  It’s official – $5 Family Fun is now an e-book!

I began the project in October 2013 so it’s strange to think that my work is now out in the world.  It’s available currently online through Amazon, Barnes & Noble, Books & Things and soon on iBooks. 

I’d like to thank the many who have supported me throughout this project! 

Publishing Agreement for $5 Family Fun!!!

The New Year is here & 2016 is going to bring many new & exciting adventures for me.  I’m excited to finally share that I’ve signed a Publishing Agreement with Cedar Fort Publishing to bring $5 Family Fun to life!!!

It will initially be available only in e-book format but if it does well, then Cedar Fort will produce a print version too.  The first of 5 steps in the editorial process will begin next month and they’re anticipating a June 2016 release date.

I’m thrilled for this opportunity and will continue to share $5 Family Fun updates as we get closer to June. Thank you to all who have encouraged and supported this project & me during this process. For that, I am eternally grateful!

Chicken Tostadas with Avocado Cream Sauce (with Thanksgiving turkey leftovers)

Looking for a completely different flavor profile for your Thanksgiving leftover turkey?  Substitute chicken with turkey to make this light and flavorful Chicken Tostadas with Avocado Cream Sauce recipe.

Ingredients: 

  • 4 tablespoons of low-fat sour cream
  • 4 tablespoons chicken broth
  • 4 tablespoons lime juice
  • 4 teaspoons vegetable oil
  • 1/2 teaspoon ground red pepper
  • 1/4 teaspoon salt
  • 1 peeled, ripe avocado
  • 1/2 tablespoon vegetable oil
  • 2 cloves of minced garlic
  • 1 1/2 tablespoons diced green chilis
  • 2 cups shredded or finely chopped cooked chicken (or turkey)
  • 1 tablespoon vegetable oil
  • 4 flour tortillas
  • 4 cups chopped spinach
  • 1 cup chopped fresh cilantro
  • 1/2 cup chopped tomato
  • 1/2 cup shredded white Mexican cheese mix or crumbled quest fresco

Directions: 

  • Combine first 7 ingredients in a blender or food processor until smooth.
  • In a pan, combine next 4 ingredients and warm under medium low heat.
  • Heat the next ingredient (1 tablespoon vegetable oil) in skillet. Add tortillas one at a time.  Brown & puff on one side, then flip and repeat each on the other side.  Pat each dry with paper towels.
  • Place tortilla on a plate. Top with chicken mixture. Then top with vegetables, avocado cream sauce & shredded cheese.

 

Easy Pie Crust Recipe

Easy Pie Crust (yield single crust)

Ingredients:

1 cup all-purpose flour
1/2 teaspoon salt
1/3 cup vegetable shortening
6 to 8 Tablespoons ice cold water

Directions:
1. Sift flour & salt together.
2. Cut in shortening with a pastry blender (see below image) until shortening pieces are the half size of peas.  If you don’t have a pastry blender, you cans use a fork or blend with food processor.
3. Sprinkle dry mixture with two tablespoons of cold water.
4. Mix with clean hands.
5. Repeat until all is moistened.
6. Form dough into a 2 ball.
7. Chill for 10 to 15 minutes.
8. Place a ball onto a floured surface & slightly flatten with hands.
9. With rolling pin, roll from the center to the edges from all angles until dough is 1/8 of an inch thick.
10. Turn pie plate upside down & cut dough an inch wider than the pie plate all the way around.
11. Gently fold dough in half.
12. Fold in half again so it’s a quarter of the size of the full circle.
13. Lay into the pie plate.  Unfold the two folds until fully opened & push into the edges of the pie pan.
14. Use unbaked or blind baked (pre-baked) per the directions of your favorite pie recipe.
15. Save a slice for me!!!
